Al Kabsa Traditional Saudi Rice and Chicken Recipe

Main Ingredients
- 1 whole Chicken, cut into pieces
- 2 cups Basmati Rice rinsed and soaked
- 1 large Onion chopped
- 2 cloves Garlic minced
- 1 large Tomato chopped
- 2 tablespoon Tomato Paste
- 1 teaspoon Ground Cumin
- 1 teaspoon Ground Coriander
- 1 teaspoon Ground Turmeric
- 1 teaspoon Ground Cinnamon
- 1 teaspoon Ground Black Pepper
- 1 teaspoon Salt or to taste
- 4 cups Chicken Broth
- 1 tablespoon Vegetable Oil
1. Heat the oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until golden brown.
2. Add the chicken pieces and cook until they are browned on all sides.
3. Stir in the chopped tomato, tomato paste, and all the spices. Cook for a few minutes until the tomatoes soften.
4. Pour in the chicken broth and bring to a boil. Reduce the heat, cover, and let it simmer for about 30 minutes.
5. Add the soaked rice to the pot, stir well, and cover. Cook on low heat for another 20-25 minutes, or until the rice is fully cooked and has absorbed the liquid.
6. Fluff the rice with a fork and serve hot.
