Al Kabsa Traditional Saudi Rice and Chicken Recipe

Main Ingredients
- 1 whole Chicken, cut into pieces
- 2 cups Basmati Rice rinsed and soaked
- 1 large Onion chopped
- 2 cloves Garlic minced
- 1 large Tomato chopped
- 2 tablespoon Tomato Paste
- 1 teaspoon Ground Cumin
- 1 teaspoon Ground Coriander
- 1 teaspoon Ground Turmeric
- 1 teaspoon Ground Cinnamon
- 1 teaspoon Ground Black Pepper
- 1 teaspoon Salt or to taste
- 4 cups Chicken Broth
- 1 tablespoon Vegetable Oil
- 1. Heat the oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until golden brown. 
- 2. Add the chicken pieces and cook until they are browned on all sides. 
- 3. Stir in the chopped tomato, tomato paste, and all the spices. Cook for a few minutes until the tomatoes soften. 
- 4. Pour in the chicken broth and bring to a boil. Reduce the heat, cover, and let it simmer for about 30 minutes. 
- 5. Add the soaked rice to the pot, stir well, and cover. Cook on low heat for another 20-25 minutes, or until the rice is fully cooked and has absorbed the liquid. 
- 6. Fluff the rice with a fork and serve hot.
