Authentic German Potato Salad Recipe

Main Ingredients
- 2 pounds Yukon Gold potatoes peeled and sliced
- 1 cup Chicken broth
- ½ cup White vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon Sugar
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- 1 medium Onion finely chopped
- 4 slices Bacon diced
- 2 tablespoon Chopped fresh parsley
- 1. Boil the potatoes in a large pot until tender, about 15-20 minutes. Drain and set aside. 
- 2. In a skillet, cook the bacon until crispy. Remove and set aside, leaving the drippings in the skillet. 
- 3. Add the chopped onion to the skillet and cook until translucent. 
- 4. Stir in the chicken broth, vinegar, mustard, sugar, salt, and pepper. Bring to a boil. 
- 5. Add the potatoes and bacon back into the skillet. Gently stir to coat the potatoes with the dressing. 
- 6. Transfer to a mixing bowl and sprinkle with chopped parsley. Serve warm.
