Authentic German Potato Salad Recipe

- 2 pounds Yukon Gold potatoes peeled and sliced
- 1 cup Chicken broth
- ½ cup White vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon Sugar
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- 1 medium Onion finely chopped
- 4 slices Bacon diced
- 2 tablespoon Chopped fresh parsley
1. Boil the potatoes in a large pot until tender, about 15-20 minutes. Drain and set aside.
2. In a skillet, cook the bacon until crispy. Remove and set aside, leaving the drippings in the skillet.
3. Add the chopped onion to the skillet and cook until translucent.
4. Stir in the chicken broth, vinegar, mustard, sugar, salt, and pepper. Bring to a boil.
5. Add the potatoes and bacon back into the skillet. Gently stir to coat the potatoes with the dressing.
6. Transfer to a mixing bowl and sprinkle with chopped parsley. Serve warm.
