Ingredients

  • 4 tablespoon vegetable oil
  • 1 cup chopped onion
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 2 tablespoon sesame seeds toasted
  • 1 cup crushed tomatoes
  • 2 tablespoon peanut butter
  • 1 tablespoon cocoa powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 oz Mexican chocolate chopped

Instructions 

  1. Heat the oil in a large pot over medium heat. Add the onion and garlic, and cook until softened.
  2. Add the chicken broth, sesame seeds, tomatoes, peanut butter, cocoa powder, cinnamon, cumin, oregano, salt, and pepper. Stir to combine.
  3. Bring the mixture to a boil, then reduce the heat and simmer for about 1 hour, stirring occasionally.
  4. Remove from heat and let cool slightly. Transfer the mixture to a blender and blend until smooth.
  5. Return the sauce to the pot, add the chopped Mexican chocolate, and cook over low heat until the chocolate is melted and the sauce is thickened, about 15 minutes.
