Ingredients

  • 1 lb beef stew meat cut into bite-sized pieces
  • 1 cup pearl barley
  • 1 onion diced
  • 3 carrots sliced
  • 2 celery stalks sliced
  • 4 cups beef broth
  • 2 cups water
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper or to taste
  • 2 tablespoon olive oil

Instructions 

  1. 1. Heat the olive oil in a large pot over medium-high heat. Add the beef and cook until browned on all sides.
  2. 2. Add the onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
  3. 3. Stir in the garlic and cook for another minute.
  4. 4. Add the beef broth, water, barley, thyme, salt, and pepper. Bring to a boil.
  5. 5. Reduce the heat to low and simmer for about 1 hour, or until the barley and beef are tender.
  6. 6. Adjust seasoning with additional salt and pepper if needed. Serve hot.
