Ingredients 

Main Ingredients

  • 3 lbs Beef Chuck Roast
  • 2 cups Beef Broth
  • 1 cup Red Wine optional
  • 4 Carrots peeled and chopped
  • 4 Potatoes peeled and chopped
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 2 sprigs Thyme
  • 2 sprigs Rosemary

Instructions 

  1. Preheat your oven to 300°F (150°C).
  2. Heat olive oil in a Dutch oven over medium-high heat. Brown the roast on all sides.
  3. Remove the roast and set aside. In the same pot, sauté onions and garlic until softened.
  4. Return the roast to the pot. Add beef broth, red wine, carrots, potatoes, thyme, and rosemary.
  5. Bring to a simmer, cover, and transfer to the oven. Cook for 4 hours or until the meat is tender.
  6. Season with salt and pepper to taste before serving.
