Main Ingredients
- 4 lbs Beef short ribs
- 2 tablespoon Olive oil
- 1 large Onion chopped
- 3 cloves Garlic minced
- 2 cups Beef broth
- 1 cup Red wine
- 2 tablespoon Tomato paste
- 2 sprigs Thyme
- 2 sprigs Rosemary
- to taste Salt
- to taste Black pepper
- Preheat your oven to 325°F (165°C). 
- Season the short ribs with salt and pepper. 
- Heat olive oil in a Dutch oven over medium-high heat. Brown the ribs on all sides, then remove and set aside. 
- In the same pot, add the chopped onion and cook until softened. Add the garlic and cook for another minute. 
- Stir in the tomato paste, then add the beef broth and red wine. Bring to a simmer. 
- Return the ribs to the pot, add the thyme and rosemary sprigs. Cover and transfer to the oven. 
- Bake for about 3 hours, or until the meat is tender and falling off the bone. 
- Remove the ribs from the pot and let them rest for a few minutes before serving.
