Ingredients 

Main Ingredients

  • 1 cup Black Beans cooked
  • 1 large Sweet Potato peeled and diced
  • 1 cup Shredded Cheese
  • 4 large Tortillas
  • 1 tablespoon Olive Oil
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
  • 1 pinch Salt to taste
  • 1 pinch Black Pepper to taste

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced sweet potatoes and cook until tender, about 10 minutes.
  3. Add black beans, cumin, chili powder, salt, and pepper. Cook for another 5 minutes.
  4. Place a tortilla in a separate skillet over medium heat. Sprinkle half with cheese, then add the sweet potato and black bean mixture. Top with more cheese and another tortilla.
  5. Cook until the bottom tortilla is golden brown, then flip and cook the other side until golden brown and the cheese is melted.
  6. Repeat with remaining tortillas and filling. Cut into wedges and serve.
