Ingredients 

Main Ingredients

  • 1 cup Rice
  • 1 can Black Beans drained and rinsed
  • 1 tablespoon Olive Oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 2 cups Water
  • 1 cup Chicken Broth or vegetable broth

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Stir in the rice, cumin, and salt, and cook for 2 minutes.
  5. Add the water and chicken broth, bring to a boil.
  6. Reduce heat to low, cover, and simmer for 20 minutes.
  7. Add the black beans, stir, and cook for another 5 minutes.
  8. Fluff the rice with a fork and serve warm.
