Instructions
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another minute.
Stir in the rice, cumin, and salt, and cook for 2 minutes.
Add the water and chicken broth, bring to a boil.
Reduce heat to low, cover, and simmer for 20 minutes.
Add the black beans, stir, and cook for another 5 minutes.
Fluff the rice with a fork and serve warm.
