Blackberry Pie Recipe

Pie Crust
- 2 ½ cups all-purpose flour
- 1 cup unsalted butter cold, cut into cubes
- ¼ cup ice water
Filling
- 5 cups blackberries fresh or frozen
- 1 cup granulated sugar
- ¼ cup cornstarch
- 1 tablespoon lemon juice freshly squeezed
- 1 teaspoon lemon zest
- Preheat your oven to 375°F (190°C). 
- In a mixing bowl, combine flour and butter. Use a pastry cutter or your hands to mix until it resembles coarse crumbs. 
- Add ice water gradually, mixing until the dough comes together. Divide the dough in half, shape into discs, and refrigerate for 30 minutes. 
- Roll out one disc of dough and fit it into a pie dish. Set aside. 
- In another bowl, mix blackberries, sugar, cornstarch, lemon juice, and lemon zest. Pour the filling into the pie crust. 
- Roll out the second disc of dough and place it over the filling. Trim and crimp the edges. Cut a few slits in the top crust to allow steam to escape. 
- Bake for 45 minutes or until the crust is golden brown and the filling is bubbly. Let cool before serving.
