Ingredients 

Pie Crust

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter cold, cut into cubes
  • ¼ cup ice water

Filling

  • 5 cups blackberries fresh or frozen
  • 1 cup granulated sugar
  • ¼ cup cornstarch
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon lemon zest

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine flour and butter. Use a pastry cutter or your hands to mix until it resembles coarse crumbs.
  3. Add ice water gradually, mixing until the dough comes together. Divide the dough in half, shape into discs, and refrigerate for 30 minutes.
  4. Roll out one disc of dough and fit it into a pie dish. Set aside.
  5. In another bowl, mix blackberries, sugar, cornstarch, lemon juice, and lemon zest. Pour the filling into the pie crust.
  6. Roll out the second disc of dough and place it over the filling. Trim and crimp the edges. Cut a few slits in the top crust to allow steam to escape.
  7. Bake for 45 minutes or until the crust is golden brown and the filling is bubbly. Let cool before serving.
