Delicious peanut butter and chocolate treats that resemble the nut of the buckeye tree.

Main Ingredients
- 1.5 cups Creamy Peanut Butter
- 0.5 cup Unsalted Butter softened
- 1 teaspoon Vanilla Extract
- 4 cups Powdered Sugar
- 2 cups Semi-Sweet Chocolate Chips
- 2 tablespoons Shortening
In a large mixing bowl, beat peanut butter, butter, and vanilla extract until smooth.
Gradually add powdered sugar, beating until well combined.
Roll mixture into 1-inch balls and place on a baking sheet lined with parchment paper. Chill for 30 minutes.
In a microwave-safe bowl, melt chocolate chips and shortening in 30-second intervals, stirring until smooth.
Insert a toothpick into each peanut butter ball and dip into melted chocolate, leaving a small portion of peanut butter visible at the top.
Place back on the baking sheet and refrigerate until chocolate is set.
