Main Ingredients
- 1 large Butternut Squash peeled, seeded, and cubed
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 4 cups Vegetable Broth
- 1 cup Heavy Cream
- to taste Salt and Pepper
1. In a large pot, sauté the chopped onion and minced garlic until translucent.
2. Add the cubed butternut squash and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
3. Use a blender to puree the soup until smooth.
4. Return the soup to the pot, stir in the heavy cream, and season with salt and pepper to taste. Simmer for another 10 minutes.
5. Serve hot and enjoy!
