Butternut Vegetable Soup
A hearty and healthy butternut squash vegetable soup.

Main Ingredients
- 1 medium Butternut Squash peeled and cubed
- 2 cups Vegetable Broth
- 1 cup Carrots sliced
- 1 cup Celery sliced
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 1 tablespoon Olive Oil
Heat olive oil in a large pot over medium heat.
Add onion, garlic, carrots, and celery. Cook until softened.
Add butternut squash and vegetable broth. Bring to a boil.
Reduce heat and simmer until squash is tender, about 20 minutes.
Blend the soup until smooth. Season with salt and pepper.
