- ½ cup popcorn kernels
- 1 cup granulated sugar
- ¼ cup unsalted butter
- ¼ cup light corn syrup
- ½ teaspoon salt
- ¼ teaspoon baking soda
- ½ teaspoon vanilla extract
Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper.
Pop the popcorn kernels and place them in a large bowl.
In a saucepan, combine sugar, butter, corn syrup, and salt. Bring to a boil over medium heat, stirring constantly.
Once boiling, stop stirring and let it boil for 4-5 minutes until it turns a light golden color.
Remove from heat and stir in baking soda and vanilla extract.
Pour the caramel mixture over the popcorn and stir to coat evenly.
Spread the popcorn on the prepared baking sheet and bake for 30 minutes, stirring every 10 minutes.
Let it cool completely before breaking into pieces.
