Carrot and Ginger Soup

Main Ingredients
- 1 tablespoon Olive oil
- 1 medium Onion, chopped
- 4 cups Carrots, chopped
- 1 tablespoon Ginger, grated
- 4 cups Vegetable broth
- 1 cup Coconut milk
- to taste Salt and pepper
1. Heat the olive oil in a pot over medium heat.
2. Add the chopped onion and cook until translucent.
3. Add the chopped carrots and grated ginger, cook for a few minutes.
4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until carrots are tender, about 20 minutes.
5. Use a blender to puree the soup until smooth.
6. Stir in the coconut milk and season with salt and pepper to taste. Serve hot.
