Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 Onion, chopped
  • 1 Red Bell Pepper, chopped
  • 3 cloves Garlic, minced
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Ground Coriander
  • 1 can Diced Tomatoes (400g can)
  • 4 Eggs
  • to taste Salt and Pepper
  • ¼ cup Fresh Parsley, chopped

Instructions 

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and bell pepper, and cook until softened.
  2. Add minced garlic, cumin, paprika, and ground coriander. Cook for another minute.
  3. Pour in the diced tomatoes and season with salt and pepper. Simmer for 10 minutes until the sauce thickens.
  4. Make small wells in the sauce and crack the eggs into each well. Cover the skillet and cook until the eggs are set to your liking.
  5. Garnish with fresh parsley and serve hot with crusty bread.
