Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 4 cups Chicken Broth
  • 2 cups Diced Potatoes
  • 2 cups Cooked Chicken, shredded
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 teaspoon Dried Thyme

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add diced potatoes and cook until tender, about 20 minutes.
  6. Add shredded chicken, salt, pepper, and thyme. Simmer for another 10 minutes.
  7. Serve hot and enjoy!
