Ingredients

  • 1 gallon water
  • ¾ cup kosher salt
  • ¾ cup sugar
  • 1 tablespoon black peppercorns
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried sage
  • 4 cloves garlic, crushed

Instructions 

  1. 1. Combine all ingredients in a large pot.
  2. 2. Stir until salt and sugar are dissolved.
  3. 3. Submerge chicken in the brine.
  4. 4. Refrigerate for at least 4 hours, or overnight.
  5. 5. Rinse chicken thoroughly before cooking.
