Brine Ingredients
- 1 gallon water
- ¾ cup kosher salt
- ¾ cup sugar
- 1 tablespoon black peppercorns
- 1 tablespoon dried thyme
- 1 tablespoon dried rosemary
- 1 tablespoon dried sage
- 4 cloves garlic, crushed
1. Combine all ingredients in a large pot.
2. Stir until salt and sugar are dissolved.
3. Submerge chicken in the brine.
4. Refrigerate for at least 4 hours, or overnight.
5. Rinse chicken thoroughly before cooking.
