Ingredients

  • 4 pieces Chicken breasts thinly sliced
  • ½ cup Flour for dredging
  • ¼ cup Olive oil
  • ½ cup Chicken broth
  • ¼ cup Lemon juice freshly squeezed
  • 2 tablespoons Capers drained
  • 2 tablespoons Butter
  • to taste Salt and pepper

Instructions 

  1. 1. Pound the chicken breasts to an even thickness using a meat mallet.
  2. 2. Dredge the chicken in flour, shaking off any excess.
  3. 3. Heat the olive oil in a skillet over medium-high heat.
  4. 4. Cook the chicken until golden brown, about 3-4 minutes per side. Remove and set aside.
  5. 5. In the same skillet, add chicken broth, lemon juice, and capers. Bring to a simmer.
  6. 6. Return the chicken to the skillet and simmer for another 5 minutes.
  7. 7. Stir in the butter until melted and sauce is smooth. Season with salt and pepper to taste.
  8. 8. Serve the chicken with the sauce spooned over the top.
