- 4 pieces Chicken breasts thinly sliced
- ½ cup Flour for dredging
- ¼ cup Olive oil
- ½ cup Chicken broth
- ¼ cup Lemon juice freshly squeezed
- 2 tablespoons Capers drained
- 2 tablespoons Butter
- to taste Salt and pepper
1. Pound the chicken breasts to an even thickness using a meat mallet.
2. Dredge the chicken in flour, shaking off any excess.
3. Heat the olive oil in a skillet over medium-high heat.
4. Cook the chicken until golden brown, about 3-4 minutes per side. Remove and set aside.
5. In the same skillet, add chicken broth, lemon juice, and capers. Bring to a simmer.
6. Return the chicken to the skillet and simmer for another 5 minutes.
7. Stir in the butter until melted and sauce is smooth. Season with salt and pepper to taste.
8. Serve the chicken with the sauce spooned over the top.
