Main Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 6 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 can diced tomatoes
- 1 can black beans, drained and rinsed
- 1 lime, juiced
- to taste salt and pepper
- 1 cup tortilla chips, crushed
- 1 cup shredded cheese
- 1 avocado, sliced
- 1 cilantro, chopped
Heat olive oil in a large pot over medium heat.
Add onion, garlic, and bell pepper. Cook until softened.
Stir in cumin and chili powder. Cook for 1 minute.
Add chicken broth, cooked chicken, diced tomatoes, and black beans. Bring to a boil.
Reduce heat and simmer for 20 minutes.
Stir in lime juice and season with salt and pepper to taste.
Serve hot, topped with tortilla chips, shredded cheese, avocado slices, and cilantro.
