Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoon red curry paste
  • 4 cups pumpkin puree
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 1 tablespoon lime juice
  • to taste salt and pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  2. Add the minced garlic and ginger, and cook for another 2 minutes.
  3. Stir in the red curry paste and cook for 1 minute.
  4. Add the pumpkin puree and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Remove from heat and use a blender to puree the soup until smooth.
  6. Return the soup to the pot, stir in the coconut milk and lime juice, and season with salt and pepper to taste. Heat through before serving.
