Instructions
Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Add shredded chicken and chicken broth. Bring to a simmer.
Stir in heavy cream and gnocchi. Cook until gnocchi are tender, about 5-7 minutes.
Add fresh spinach and cook until wilted. Season with salt and pepper to taste.
Serve hot and enjoy!
