Ingredients

  • 4 cups corn kernels fresh or frozen
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 small onion chopped
  • 2 tablespoon butter
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper to taste

Instructions 

  1. 1. Melt butter in a pot over medium heat. Add chopped onion and cook until translucent.
  2. 2. Add corn kernels and chicken broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
  3. 3. Use a blender to puree the soup until smooth. Return to the pot.
  4. 4. Stir in heavy cream, salt, and black pepper. Heat through but do not boil.
  5. 5. Serve hot and enjoy!
