Cream of Fresh Asparagus Soup

- 1 lb fresh asparagus trimmed and cut into 1-inch pieces
- 1 medium onion chopped
- 2 tablespoon butter
- 4 cups chicken broth
- 1 cup heavy cream
- to taste salt and pepper
1. In a large saucepan, melt butter over medium heat. Add onion and cook until tender.
2. Add asparagus and chicken broth. Bring to a boil, then reduce heat and simmer until asparagus is tender, about 10 minutes.
3. Puree the soup in a blender until smooth. Return to the saucepan.
4. Stir in the heavy cream and season with salt and pepper. Heat through, but do not boil.
