- 2 lbs Yuca
- 4 cloves Garlic minced
- ¼ cup Olive Oil
- ¼ cup Lime Juice freshly squeezed
- 1 teaspoon Salt to taste
- ½ teaspoon Black Pepper to taste
- 1 tablespoon Fresh Parsley chopped
1. Peel the yuca and cut it into chunks.
2. Boil the yuca in a large pot of salted water until tender, about 25-30 minutes.
3. Drain the yuca and remove the tough, fibrous core.
4. In a separate pan, heat the olive oil over medium heat and sauté the minced garlic until fragrant.
5. Add the lime juice, salt, and pepper to the pan and stir to combine.
6. Pour the garlic-lime mixture over the cooked yuca and toss to coat evenly.
7. Garnish with chopped parsley and serve warm.
