Ingredients

  • 2 cups black beans dried, soaked overnight
  • 1 pound pork shoulder cut into chunks
  • 1 pound beef chuck cut into chunks
  • 1 pound smoked sausage sliced
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 6 cups water

Instructions 

  1. 1. In a large pot, heat some oil over medium heat. Add the onions and garlic, and cook until softened.
  2. 2. Add the pork shoulder, beef chuck, and smoked sausage. Cook until browned on all sides.
  3. 3. Add the soaked black beans, bay leaves, salt, and pepper. Pour in the water and bring to a boil.
  4. 4. Reduce the heat to low and let it simmer for about 2 hours, or until the beans are tender and the meat is cooked through.
  5. 5. Adjust the seasoning with more salt and pepper if needed. Serve hot with rice and orange slices.
