- 1 cup quinoa
- 1 lb shrimp, peeled and deveined
- 1 avocado, sliced
- 1 cup black beans, rinsed and drained
- 1 lime, juiced
- 2 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon salt
- 1 teaspoon pepper
1. Cook quinoa according to package instructions.
2. In a skillet, heat olive oil over medium heat. Add shrimp, cumin, salt, and pepper. Cook until shrimp is pink and opaque, about 5 minutes.
3. In a mixing bowl, combine cooked quinoa, shrimp, black beans, avocado, and lime juice. Toss gently to combine.
4. Serve immediately.
