Instant Pot Vegan Split Pea Soup Recipe

Main Ingredients
- 1 cup split peas
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 2 cups water
- 2 stalks celery, diced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
1. Set the Instant Pot to sauté mode and add a splash of water or vegetable broth. Add the diced onion and garlic, and sauté until softened, about 3-4 minutes.
2. Add the split peas, carrots, celery, dried thyme, salt, black pepper, vegetable broth, and water. Stir to combine.
3. Secure the lid on the Instant Pot and set the valve to sealing. Select the manual or pressure cook setting and set the cooking time to 15 minutes.
4. Once the cooking time is complete, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
5. Open the lid and stir the soup. Adjust seasoning if needed. Serve hot.
