Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 cup Chopped Onion
  • 2 cloves Garlic, minced
  • 2 cups Diced Carrots
  • 2 cups Diced Celery
  • 1 cup Diced Zucchini
  • 1 can Diced Tomatoes (14.5 oz)
  • 4 cups Vegetable Broth
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Oregano
  • 1 cup Chopped Spinach

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.
  2. Add carrots, celery, and zucchini. Cook for about 5 minutes, stirring occasionally.
  3. Stir in diced tomatoes, vegetable broth, basil, and oregano. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes, until vegetables are tender.
  5. Add chopped spinach and cook for another 5 minutes. Season with salt and pepper to taste.
