Main Ingredients
- 1 lb Chicken breast, diced
- 1 lb Andouille sausage, sliced
- 1 lb Shrimp, peeled and deveined
- 1 cup Onion, chopped
- 1 cup Green bell pepper, chopped
- 1 cup Celery, chopped
- 3 cloves Garlic, minced
- 1 can Diced tomatoes
- 2 cups Chicken broth
- 1.5 cups Long grain rice
- 2 teaspoon Cajun seasoning
- 1 teaspoon Dried thyme
- 1 teaspoon Dried oregano
- 1 teaspoon Salt
- 0.5 teaspoon Black pepper
- 2 tablespoon Olive oil
- Heat olive oil in a large pot over medium heat. 
- Add chicken and sausage, cook until browned. 
- Add onion, bell pepper, celery, and garlic. Cook until vegetables are tender. 
- Stir in diced tomatoes, chicken broth, rice, and seasonings. Bring to a boil. 
- Reduce heat, cover, and simmer for 20-25 minutes until rice is cooked. 
- Add shrimp and cook for another 5 minutes until shrimp is pink and cooked through. 
- Serve hot and enjoy!
