Main Ingredients
- 1 lb Chicken breast, diced
- 1 lb Andouille sausage, sliced
- 1 lb Shrimp, peeled and deveined
- 1 cup Onion, chopped
- 1 cup Green bell pepper, chopped
- 1 cup Celery, chopped
- 3 cloves Garlic, minced
- 1 can Diced tomatoes
- 2 cups Chicken broth
- 1.5 cups Long grain rice
- 2 teaspoon Cajun seasoning
- 1 teaspoon Dried thyme
- 1 teaspoon Dried oregano
- 1 teaspoon Salt
- 0.5 teaspoon Black pepper
- 2 tablespoon Olive oil
Heat olive oil in a large pot over medium heat.
Add chicken and sausage, cook until browned.
Add onion, bell pepper, celery, and garlic. Cook until vegetables are tender.
Stir in diced tomatoes, chicken broth, rice, and seasonings. Bring to a boil.
Reduce heat, cover, and simmer for 20-25 minutes until rice is cooked.
Add shrimp and cook for another 5 minutes until shrimp is pink and cooked through.
Serve hot and enjoy!
