Ingredients 

Main Ingredients

  • 2 cups cooked rice preferably day-old
  • 1 cup kimchi chopped
  • 2 tablespoons kimchi juice
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 2 teaspoons vegetable oil
  • 2 cloves garlic minced
  • 2 stalks green onions chopped
  • 2 large eggs beaten
  • 1 teaspoon sesame seeds for garnish

Instructions 

  1. Heat the vegetable oil in a wok or large skillet over medium-high heat.
  2. Add the minced garlic and cook until fragrant, about 30 seconds.
  3. Add the chopped kimchi and cook for 2-3 minutes.
  4. Push the kimchi to one side of the wok and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
  5. Add the cooked rice, kimchi juice, soy sauce, and sesame oil. Stir-fry everything together for 5-7 minutes.
  6. Mix in the chopped green onions and cook for another minute.
  7. Serve hot, garnished with sesame seeds.
