Ingredients

  • 3 pcs Lemons zested and juiced
  • 1 cup Sugar
  • 4 pcs Eggs large
  • ½ cup Butter unsalted, cut into pieces

Instructions 

  1. In a saucepan, whisk together lemon juice, lemon zest, sugar, and eggs.
  2. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
  3. Remove from heat and stir in butter until melted and smooth.
  4. Strain the curd through a fine-mesh strainer into a bowl to remove any lumps.
  5. Cover with plastic wrap, pressing it directly onto the surface of the curd to prevent a skin from forming. Chill in the refrigerator before using.
