Lemon Curd Recipe

Main Ingredients
- 3 pcs Lemons zested and juiced
- 1 cup Sugar
- 4 pcs Eggs large
- ½ cup Butter unsalted, cut into pieces
In a saucepan, whisk together lemon juice, lemon zest, sugar, and eggs.
Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
Remove from heat and stir in butter until melted and smooth.
Strain the curd through a fine-mesh strainer into a bowl to remove any lumps.
Cover with plastic wrap, pressing it directly onto the surface of the curd to prevent a skin from forming. Chill in the refrigerator before using.
