Main Ingredients
- 1 cup Lentils rinsed
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 1 cup Carrots diced
- 1 cup Celery diced
- 6 cups Vegetable Broth
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt to taste
- ½ teaspoon Black Pepper to taste
- 2 tablespoon Olive Oil
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onions and minced garlic. Sauté until onions are translucent.
3. Add diced carrots and celery. Cook for another 5 minutes.
4. Stir in lentils, vegetable broth, cumin, paprika, salt, and black pepper.
5. Bring to a boil, then reduce heat and simmer for 30-35 minutes, or until lentils are tender.
6. Adjust seasoning to taste and serve hot.
