Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Carrots diced
  • 1 cup Celery diced
  • 6 cups Vegetable Broth
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste
  • 2 tablespoon Olive Oil

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onions and minced garlic. Sauté until onions are translucent.
  3. 3. Add diced carrots and celery. Cook for another 5 minutes.
  4. 4. Stir in lentils, vegetable broth, cumin, paprika, salt, and black pepper.
  5. 5. Bring to a boil, then reduce heat and simmer for 30-35 minutes, or until lentils are tender.
  6. 6. Adjust seasoning to taste and serve hot.
