Ingredients

Main Ingredients

  • 4 cups Potatoes, peeled and diced
  • 1 cup Cheddar cheese, shredded
  • 1 cup Bacon, cooked and crumbled
  • 1 cup Sour cream
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Butter

Instructions

  1. 1. In a large pot, melt the butter over medium heat.
  2. 2. Add the diced potatoes and cook for 5 minutes, stirring occasionally.
  3. 3. Pour in the chicken broth and bring to a boil. Reduce heat and simmer until potatoes are tender, about 15 minutes.
  4. 4. Use a potato masher to slightly mash the potatoes, leaving some chunks for texture.
  5. 5. Stir in the heavy cream, sour cream, salt, and pepper. Cook for another 5 minutes.
  6. 6. Add the shredded cheddar cheese and crumbled bacon. Stir until the cheese is melted and everything is well combined.
  7. 7. Serve hot, garnished with extra cheese, bacon, and a dollop of sour cream if desired.
