Lyonnaise Potatoes Recipe
A classic French side dish made with potatoes and onions, cooked in butter and olive oil until golden and tender.

- 4 large potatoes peeled and thinly sliced
- 1 large onion thinly sliced
- 2 tablespoons butter
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 tablespoons fresh parsley chopped (optional)
Preheat oven to 400°F (200°C).
Heat butter and olive oil in a large oven-safe skillet over medium heat.
Add onions and cook until soft and golden, about 5 minutes.
Add potatoes, season with salt and pepper, and cook for another 5 minutes, stirring occasionally.
Transfer skillet to the oven and bake for 20 minutes, or until potatoes are tender and golden brown.
Sprinkle with fresh parsley before serving, if desired.
