  • 1 large onion thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley chopped (optional)

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Heat butter and olive oil in a large oven-safe skillet over medium heat.
  3. Add onions and cook until soft and golden, about 5 minutes.
  4. Add potatoes, season with salt and pepper, and cook for another 5 minutes, stirring occasionally.
  5. Transfer skillet to the oven and bake for 20 minutes, or until potatoes are tender and golden brown.
  6. Sprinkle with fresh parsley before serving, if desired.
