Instructions 

  1. 1. Pour the heavy cream into a saucepan and heat over medium heat until it reaches 185°F (85°C).
  2. 2. Remove from heat and stir in the lemon juice. Let it cool to room temperature.
  3. 3. Pour the mixture into a cheesecloth-lined strainer and let it drain in the refrigerator for 8-12 hours.
  4. 4. Transfer the mascarpone to a container and refrigerate until ready to use.
