Mexican Shrimp Cocktail Recipe

Main Ingredients
- 1 lb Shrimp, cooked and peeled
- 1 cup Tomato juice
- ½ cup Ketchup
- ¼ cup Lime juice
- 1 Small red onion, finely chopped
- 1 Jalapeño, seeded and finely chopped
- 1 Cucumber, diced
- ¼ cup Cilantro, chopped
- 1 Avocado, diced
- to taste Salt
- to taste Pepper
In a large mixing bowl, combine the tomato juice, ketchup, and lime juice.
Add the chopped red onion, jalapeño, cucumber, and cilantro. Mix well.
Gently fold in the shrimp and avocado. Season with salt and pepper to taste.
Chill in the refrigerator for at least 30 minutes before serving.
Serve in individual cups or bowls, garnished with extra cilantro and lime wedges if desired.
