Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground ginger
  • 1 can diced tomatoes (14.5 oz)
  • 2 cans chickpeas, drained and rinsed (15 oz each)
  • 2 cups vegetable broth
  • 1 carrot, sliced
  • 1 zucchini, chopped
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • ¼ cup fresh cilantro, chopped for garnish

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic, ground cumin, ground cinnamon, ground turmeric, and ground ginger. Cook for another 2 minutes, stirring frequently.
  3. Add the diced tomatoes, chickpeas, vegetable broth, sliced carrot, and chopped zucchini. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  4. Season with salt and black pepper to taste. Garnish with fresh cilantro before serving.
