Main Ingredients
- 2 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon ground turmeric
- 1 teaspoon ground ginger
- 1 can diced tomatoes (14.5 oz)
- 2 cans chickpeas, drained and rinsed (15 oz each)
- 2 cups vegetable broth
- 1 carrot, sliced
- 1 zucchini, chopped
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
- ¼ cup fresh cilantro, chopped for garnish
Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add the minced garlic, ground cumin, ground cinnamon, ground turmeric, and ground ginger. Cook for another 2 minutes, stirring frequently.
Add the diced tomatoes, chickpeas, vegetable broth, sliced carrot, and chopped zucchini. Bring to a boil, then reduce heat and let simmer for 20 minutes.
Season with salt and black pepper to taste. Garnish with fresh cilantro before serving.
