Nanaimo Bars

Ingredients 

Base Layer

  • ½ cup unsalted butter melted
  • ¼ cup granulated sugar
  • 5 tablespoons cocoa powder
  • 1 teaspoon vanilla extract
  • 1 egg beaten
  • 2 cups graham cracker crumbs
  • 1 cup sweetened shredded coconut

Custard Layer

  • ½ cup unsalted butter softened
  • 2 cups powdered sugar
  • 2 tablespoons vanilla custard powder
  • 3 tablespoons milk

Top Layer

  • 4 ounces semi-sweet chocolate chopped
  • 2 tablespoons unsalted butter

Instructions 

  1. 1. In a saucepan, melt the butter, sugar, and cocoa powder over low heat. Add the beaten egg and stir until thickened. Remove from heat.
  2. 2. Stir in the graham cracker crumbs, coconut, and vanilla extract. Press the mixture into an 8x8 inch baking pan. Chill in the refrigerator while preparing the custard layer.
  3. 3. For the custard layer, beat the softened butter, powdered sugar, custard powder, and milk until smooth. Spread over the chilled base layer. Chill again.
  4. 4. For the top layer, melt the chocolate and butter together. Spread evenly over the custard layer. Chill until set.
  5. 5. Cut into bars and serve.
