Dry Ingredients
- 1.5 cups all-purpose flour
- 1 cup rolled oats
- 1 tablespoon baking powder
- 0.5 teaspoon salt
Wet Ingredients
- 1 cup milk
- 0.5 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 eggs
- 1 cup blueberries fresh or frozen
- Preheat your oven to 400°F (200°C). Grease a muffin tin or line with paper liners. 
- In a large bowl, whisk together the flour, oats, baking powder, and salt. 
- In another bowl, whisk together the milk, vegetable oil, vanilla extract, and eggs. 
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix. 
- Gently fold in the blueberries. 
- Divide the batter evenly among the muffin cups. 
- Bake for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. 
- Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
