Dry Ingredients
- 1.5 cups all-purpose flour
- 1 cup rolled oats
- 1 tablespoon baking powder
- 0.5 teaspoon salt
Wet Ingredients
- 1 cup milk
- 0.5 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 eggs
- 1 cup blueberries fresh or frozen
Preheat your oven to 400°F (200°C). Grease a muffin tin or line with paper liners.
In a large bowl, whisk together the flour, oats, baking powder, and salt.
In another bowl, whisk together the milk, vegetable oil, vanilla extract, and eggs.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Gently fold in the blueberries.
Divide the batter evenly among the muffin cups.
Bake for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
