Main Ingredients
- 1 cup Rolled oats
- 1 cup Milk
- 1 cup All-purpose flour
- ½ cup Brown sugar
- ½ cup Vegetable oil
- 1 large Egg
- 1 teaspoon Vanilla extract
- 1 teaspoon Baking powder
- ½ teaspoon Baking soda
- ½ teaspoon Salt
- 1 cup Chocolate chips
Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
In a large bowl, combine the oats and milk. Let them soak for 10 minutes.
Add the flour, brown sugar, oil, egg, and vanilla to the oat mixture. Stir until just combined.
Fold in the baking powder, baking soda, salt, and chocolate chips.
Divide the batter evenly among the muffin cups.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
