Old Fashioned Potato Cakes Recipe

- 2 cups Mashed Potatoes leftover
- 1 cup All-Purpose Flour
- 1 large Egg beaten
- ¼ cup Green Onions chopped
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper
- 2 tablespoon Vegetable Oil for frying
In a mixing bowl, combine mashed potatoes, flour, beaten egg, green onions, salt, and pepper. Mix well.
Heat vegetable oil in a frying pan over medium heat.
Form the potato mixture into small patties.
Fry the patties in the hot oil until golden brown on both sides, about 3-4 minutes per side.
Drain on paper towels and serve hot.
