Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 cup Chopped Onion
  • 2 cloves Garlic, minced
  • 3 cups Chopped Carrots
  • 3 cups Chopped Celery
  • 4 cups Chopped Potatoes
  • 6 cups Vegetable Broth
  • 1 can Diced Tomatoes (14.5 oz)
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Basil
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black Pepper to taste
  • 2 cups Chopped Spinach

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until softened.
  3. Add carrots, celery, and potatoes. Cook for about 5 minutes.
  4. Pour in vegetable broth and diced tomatoes. Bring to a boil.
  5. Add thyme, basil, salt, and pepper. Reduce heat and simmer for 30 minutes.
  6. Stir in chopped spinach and cook for another 5 minutes.
  7. Serve hot and enjoy!
