Old Fashioned Vegetable Soup Recipe

Main Ingredients
- 2 tablespoon Olive Oil
- 1 cup Chopped Onion
- 2 cloves Garlic, minced
- 3 cups Chopped Carrots
- 3 cups Chopped Celery
- 4 cups Chopped Potatoes
- 6 cups Vegetable Broth
- 1 can Diced Tomatoes (14.5 oz)
- 1 teaspoon Dried Thyme
- 1 teaspoon Dried Basil
- 1 teaspoon Salt to taste
- 0.5 teaspoon Black Pepper to taste
- 2 cups Chopped Spinach
Heat olive oil in a large pot over medium heat.
Add chopped onion and garlic, sauté until softened.
Add carrots, celery, and potatoes. Cook for about 5 minutes.
Pour in vegetable broth and diced tomatoes. Bring to a boil.
Add thyme, basil, salt, and pepper. Reduce heat and simmer for 30 minutes.
Stir in chopped spinach and cook for another 5 minutes.
Serve hot and enjoy!
