Main Ingredients
- 4 medium sweet potatoes peeled and cubed
- 2 tablespoon olive oil
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- Preheat your oven to 400°F (200°C). 
- Line a baking sheet with parchment paper. 
- In a mixing bowl, toss the sweet potatoes with olive oil, salt, and black pepper. 
- Spread the sweet potatoes evenly on the baking sheet. 
- Roast in the preheated oven for 25-30 minutes, or until tender and golden brown, stirring halfway through. 
- Serve hot and enjoy!
