Ingredients

  • 2 cups heavy cream
  • ½ cup sugar
  • 2 ½ teaspoon unflavored gelatin
  • 3 tablespoon cold water

Instructions 

  1. In a saucepan, heat the heavy cream and sugar over medium heat until the sugar dissolves.
  2. Split the vanilla bean and scrape the seeds into the cream mixture. Add the bean pod as well. If using vanilla extract, add it instead.
  3. Bring the mixture to a simmer, then remove from heat and let it sit for 10 minutes.
  4. In a small bowl, sprinkle the gelatin over cold water and let it sit for 5 minutes.
  5. Remove the vanilla bean pod from the cream mixture. Stir in the gelatin until completely dissolved.
  6. Pour the mixture into ramekins and refrigerate for at least 4 hours, or until set.
