Ingredients 

Main Ingredients

  • 1 cup Arborio rice
  • 4 cups Chicken broth kept warm
  • 1 cup Grated Parmesan cheese
  • 1 small Onion finely chopped
  • 2 tablespoon Olive oil
  • 2 tablespoon Butter
  • to taste Salt
  • to taste Black pepper freshly ground

Instructions 

  1. Heat the olive oil and butter in a large saucepan over medium heat.
  2. Add the chopped onion and cook until soft and translucent.
  3. Add the Arborio rice and cook, stirring constantly, for about 2 minutes.
  4. Begin adding the warm chicken broth, one ladle at a time, stirring frequently.
  5. Continue adding broth and stirring until the rice is creamy and cooked through, about 18-20 minutes.
  6. Stir in the grated Parmesan cheese and season with salt and freshly ground black pepper to taste.
  7. Serve immediately, garnished with extra Parmesan if desired.
