Main Ingredients
- 1 cup Arborio rice
- 4 cups Chicken broth kept warm
- 1 cup Grated Parmesan cheese
- 1 small Onion finely chopped
- 2 tablespoon Olive oil
- 2 tablespoon Butter
- to taste Salt
- to taste Black pepper freshly ground
Heat the olive oil and butter in a large saucepan over medium heat.
Add the chopped onion and cook until soft and translucent.
Add the Arborio rice and cook, stirring constantly, for about 2 minutes.
Begin adding the warm chicken broth, one ladle at a time, stirring frequently.
Continue adding broth and stirring until the rice is creamy and cooked through, about 18-20 minutes.
Stir in the grated Parmesan cheese and season with salt and freshly ground black pepper to taste.
Serve immediately, garnished with extra Parmesan if desired.
