Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 cup Diced Onion
  • 2 cloves Garlic, minced
  • 1 cup Carrots, diced
  • 1 cup Celery, diced
  • 1 can Diced Tomatoes (14.5 oz)
  • 4 cups Chicken Broth
  • 1 can Cannellini Beans (15 oz), drained and rinsed
  • 1 cup Ditalini Pasta
  • to taste Salt and Pepper
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • ¼ cup Grated Parmesan Cheese for serving

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, and celery. Cook until softened.
  3. Add diced tomatoes, chicken broth, beans, pasta, oregano, and basil. Bring to a boil.
  4. Reduce heat and simmer until pasta is tender, about 10 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot, topped with grated Parmesan cheese.
