Ingredients

  • 1 cup All-purpose flour
  • 1 tablespoon Sugar
  • 1 tablespoon Baking powder
  • ½ teaspoon Salt
  • 1 cup Milk
  • 1 large Egg
  • ½ cup Peanut butter
  • 1 large Banana, mashed
  • 2 tablespoons Butter, melted
  • 1 teaspoon Vanilla extract

Instructions 

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, mix the milk, egg, peanut butter, mashed banana, melted butter, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Heat a griddle or skillet over medium heat and lightly grease it. Pour ¼ cup of batter for each pancake onto the griddle.
  5. Cook until bubbles form on the surface of the pancakes and the edges look set, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.
  6. Serve warm with your favorite toppings.
