- 1 lb Pork tenderloin trimmed and cut into 4 pieces
- 1 cup Flour
- 2 units Eggs beaten
- 1 cup Breadcrumbs
- 4 units Sandwich buns split and toasted
- 1 cup Lettuce shredded
- 1 unit Tomato sliced
- 1 cup Mayonnaise
1. Pound the pork pieces to about ¼ inch thickness.
2. Dredge each piece in flour, dip in beaten eggs, and coat with breadcrumbs.
3. Heat a skillet over medium heat and cook the pork pieces until golden brown and cooked through, about 3-4 minutes per side.
4. Assemble the sandwiches with the cooked pork, lettuce, tomato, and mayonnaise on toasted buns.
