  • 4 cups Potatoes, peeled and diced
  • 1 cup Onion, chopped
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 2 tablespoon Butter
  • to taste Salt and pepper

Instructions 

  1. 1. In a large pot, melt the butter over medium heat.
  2. 2. Add the chopped onions and cook until translucent.
  3. 3. Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
  4. 4. Use a blender to puree the soup until smooth.
  5. 5. Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.
  6. 6. Heat through and serve hot.
