Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 1 zucchini chopped
  • 1 can diced tomatoes 14.5 oz can
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • 2 cups spinach fresh, chopped

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened, about 5 minutes.
  2. Add the carrots, celery, and zucchini. Cook for another 5 minutes, stirring occasionally.
  3. Stir in the quinoa, diced tomatoes, vegetable broth, thyme, basil, salt, and pepper. Bring to a boil.
  4. Reduce heat to a simmer and cook for 20 minutes, or until the quinoa is cooked and the vegetables are tender.
  5. Stir in the spinach and cook for another 2-3 minutes, until wilted. Adjust seasoning if needed.
  6. Serve hot and enjoy!
